I will be posting several recipes .... these are all recipes that have been passed around on RFT ... I can't find the links to them so I'm just going to rewrite them...

enjoy!


DONUT HOLES BY ANI PHYO

Donut Holes

1 cup almonds, dry
1/4 teaspoon sea salt
1 vanilla bean, scraped (1 teaspoon vanilla extract)
1 cup dried pineapple, chop (1/2 cup pineapple & 1/2 cup mango)
1 cup pitted dates
5 Tablespoons dried shredded coconut (3 tablespoons coconut)


Add ALL ingredients into food processor – Process until it becomes a dough like consistency.

Roll into little balls then roll into shredded coconut.


Enjoy!


The red is how I tweaked the recipe. I didn’t have enough Pineapple so I added Mango and it turned out wonderful!! I make them like this all the time now – I think they taste better – but you try both ways and make a decision. I call the ‘tweaked ones’…. ‘TROPICAL DONUT HOLES!’

I LOVE these donut holes! And I'll definitely be taking your lead and altering the fruit though, I can't find any dried pineapple where I live that hasn't had sugar and preservatives poured all over it yuck!

I dehydrate my own pineapple!
These were a hit at Thanksgiving! They are sooooo good!!! Unique flavor...

Oooh, eating dried pineapple is like eating candy! And it's so easy to slice and dehydrate. Enjoy!

I just had to bring this one up to the top again. I've just made another batch and we all love them, even the SAD eaters in the family. I wish I had some dried mango as StarFire suggested, I'll bet that would really taste good!!

I made RP brownies (no frosting) with a little vanilla and coconut oil, rolled them into balls, then rolled them in shredded coconut. After sitting in the refrigerator overnight, they were drier than usual, and kind of cake like. They were just like donut holes! :)

How many holes did these make? Going to a potluck tonight....

Um...around 20, but you could make them smaller to more of them.

Ooh, they were a big hit at the potluck! I made the brownie ones. Delicious! And I have to say, my partner, who is the pickiest eater ever, won't touch any salads or green veggies at all, and won't ever try my raw food, tried and LOVED these! He told me I am going to need to make more soon! YAY!

These are amazing! I tried them from Ani Phyo's video recipe a few days ago. (didn't see this post...) A friend of mine that is an avid carnovore and big sugar-eater tried them and said they were an 8 on a scale of 1-10. Another vegan friend tried them and loved them too!
I tried (per my sugar-eater friend's request) to add cacao powder, but honestly they just weren't as good.

If anyone has ideas for GOOD chocolate "donut" holes, I'd love to hear them!

Thank you StarFire for the post of the recipe and the tip about mango. Will definitely have to try that variation next time!

I tried to make these with dried pineapple from Whole Foods bulk bins and they were so tough that I could barely process them! Do you soak the dried fruit first????

Actually, I cut them up by hand which was quite a feat! I would think soaking them would have been an easier option for me, but I didn't think of it at the time. LOL

They take some time to make (I like things super-easy since I don't plan much in advance - yet), but they were soooo yummy! Even my SAD-food friend loved them and wanted more!

I made these a while back after watching Ani Phyo's video. I couldn't remember whether the shredded coconut went into the balls or was only for coating the outside of the balls. I found and watched the video again.

Ani's latest video does NOT put all the ingredients in the food processor. She uses the food processor to coarsely chop the almonds (which have been soaked and dried). She puts the chopped dates, chopped pineapple, vanilla bean seeds, salt, and 3 T. shredded coconut into a bowl and mixes it by hand. After those are mixed together, she adds the chopped almonds and continues mixing by hand. After shaping the balls (very large - only made about 10 balls) she rolls the balls in the remaining 2 T. shredded coconut.
