View Full Version : Cranberry Thumprint Cookies

I made cocount cream/milk the other day and had about 1-2 cups of fine pulp left over. Decided to try to use it and came up with this very yummy recipe. I didn't measure just threw it together but they are very good and taste almost like a soft cinnamon roll. The fruit adds a lot.
For the cookie part~
coconut pulp
walnuts
dates
agave
cinnamon
vanilla
salt
process in fp till well blended
shape into balls on teflex. I used a small cookie scoop.
press your thumb down to make a well for the filling
for filling~
1 cup or so of fresh cranberries
agave nectar
blend well, ( I used the magic bullet for this)
spoon a little into each depression
during the last few hours I added a tiny smear of agave to the top of each fruit area to give it a little gloss.
dehydrate till as dry as you'd prefer..takes a while

I've never had cranberries but for some reason when I was at sams club the other day I bought a gigantic bag of them. When I brought them home I tasted one and spit it out then my mom said they only taste good after they are cooked. Now I know that is not true so what is the secret? If you FP them the flavor changes? haha

Cranberries are a bitter fruit. That's why I like putting them in my smoothies. I don't eat them by the handful - too bitter!
When they are cooked, they are loaded down with sugar too, so that' s not good.
Try blending and adding some agave and/or orange juice!
Benefits of Cranberries

A daily glass of cranberry juice will treat diseases like cystitis.

Condensed tannins in cranberries can inhibit the oxidation of bad cholesterol and as a result protects body against atheroscelrosis.
Tannins are also considered an important contributor to a healthy heart.
Acts as bactericide and affects the acidity of the urine. In effect, it disrupts the development of kidney stone formation.

I just made these, they are in the dehydrator and I can not waitttttt!!!
I made some alterations to the cookie part, I just used cashews, dates, agave, cinnamon, salt, vanilla and it tasted soo good.

OK...solong, now I know where you got the cranberry cookie recipe......
I think I will try these this weekend, after I have the money to buy more groceries on Thursday!

By the way, can I use coconut flakes....(raw, bagged) ran through the blender for "milk" and use the pulp?? Is that the idea??

I didnt even use it. I just tasted one, def way soft still but oh so delish

OOOHHH DUH...solong!! I see that you posted that you used cashews! Thanks. It seems like I had some thumbprint cookies that used "shortbread" cookies made out of cashews.

They look great!!:) The cool thing about raw is you can use so many combinations of things and they work!!

Hi~:) Yes, you could use the coconut w/water in the blender...just squeeze all the liquid out in the nut milk bag...the coconut is so finely ground you really don't taste ot feel it in your mouth the way you would flaked coconut but it adds moisture and a cool texture.

I bought my first cranberries last weekend. Never had them before, but they looked so tempting red (yes, I'm a very "visual" person). Now I understand why it always says "sweetened" on the bags with dried cranberries!! They're soooo,..... YUCK!! :D A deadly mixure of incredibly sour and slightly bitter. However, cookies just can't be wrong, I guess, so I'll steal your idea (with a different "pastry", though) and make something rawkin sweet with them :p
Furthermore it's a great way to get rid of my (raw) agave. I mean, not that I hate it, I just don't know what to do with it. My mum sent me some, but I just don't need it, because whenever I have something sweet, its something with dried fruit usually and they already are so extremely sweet....
Maybe the frozen coconut (not young though) can somehow get involved too... :D
Yippieeeh!!! That's gonna be an important experiment for scientific reasons! Combining 3 things you don't really fancy (plus some others) to make one delish thing.... I'll let you know, .... if I survive... tee hee...
