anyone know -
I'm gonna make chile oil which requires cooking the oil, untill it starts to simmer. (olive oil)
does that ruin the good of the oil completely?:eek:
(is this where I ask?)

Well, in all actuality this entire forum, period, is not the place to ask because you're speaking of cooking the oil. We support eating raw foods so a better place to ask your question would probably be on a vegan forum or a cooked food forum or even try Google and see what websites might come up with the answer to your question.

But yes, cooking the oil...even lightly simmering, will ruin the quality of it.

What I would do if I were you, would be put in more chili than called for and let it soak in the oil for a few days. You should probably do this under refrigeration and then keep it refrigerated after that. The reason I suggest adding more chilis is because you are not going to cook it. I know heat releases the oils in the chilis. You might try warming them slightly in the dehyrdrator first. I say to add more because that way you might get more of the heat from them.

I've never tried this but it just might work. I should the oil would leach some of the heat out even if you aren't physically heating it through.

...or set it all out under the sun or in a window that gets good sunlight....guess it depends on where you live if this is an option or not!!! good luck!
