Ok, major good day. Dh and I went shopping for food today and we went to two stores (this is a major shift in shopping for us:D ) We went to Trader Joe's first and then went to WF up in Petaluma!! I must say, what a difference in shopping experience and customers in those stores!! I'll be heading North from now on. (shhh....don't tell its a secret)
Also I bought some Coconut oil, what now? What can I do with it:confused: I tried just a little taste and MMMMMmmmmmm its good! I can see its not something I would eat daily...yet! So what can I use it for?????

GIRL... WHAT TO DO WITH COCONUT OIL... OMG... SO MANY WONDERFUL MIRACULOUS THINGS!!!
here's a couple...
COCONUT OIL FUDGE
posted here on RFT -- not sure who the original person was that created this recipe though... but it is FABULOUS!!
1 1/2 cups coconut oil
1 1/2 cups honey (or agave)
1 cup cocoa powder
1/2 teaspoon salt
1 teaspoon vanilla extract (optional, tastes fine without it)
put hot water in the bottom of a 'double boiler pan'
put the coconut oil in the top pan - stir until melted.
Add other ingredients and mix together
pour in a pyrex - let it sit and harden..or
put it in the fridge...then it will harden to a fudge consistency
if you use Agave instead of honey basically u just add a little bit less...since Agave is runnier..then just keep adding agave or oil until it's mixed smooth
Delightful Coconut Fudge Bars by EvaRB... from RFT!!!
Ingredients
3 cups raw walnuts, can use dry or walnuts that have been soaked overnight
2 cups shredded coconut
½ cup carob powder
½ cup agave nectar, or to taste
¼ cup coconut oil/butter, or to taste (for creamy consistency)
¼ cup coconut water, for consistency, if desired
Preparation
1. In a large bowl, mix shredded coconut and carob poder.
2. In a food processor, grind walnuts until they are creamy.
3. Add walnuts, agave and coconut oil to the coconut/carob mixture and mix well.
4. Place mixture in flat, glass dish and cover. Place in freezer for at least an hour before serving.
5. To serve, cut out brownie-sized pieces and eat right away.
6. Store in freezer.
PLUS.... there's oil pulling with it - excellent for your teeth, makes your teeth sparkling white, plus pulls toxins from your body! helps with detox
PLUS... helps with weight loss - add it to your smoothies in the morning - (I just eat it off the spoon!)
PLUS... EXCELLENT moisturizer for yur skin!!

You see, the WF in town near me is ALWAYS flowing over in the parking lot and I just can't get past some of the attitudes of the shoppers.... I live in Marin county, and well ....... needless to say, dh is a meathead (loves meats), I on the other hand eat veggies and fruits, etc. He has been supportive of my RAWness (didn't even flinch when I spent $$$:eek: on the coconut oil!)!! Major trip though when he joined me in WF and was looking at all the raw stuff and the bulk items and he's asking do I need this or that, and looking at prices of stuff, and I'm just yapping away about how I want to do this and do that ....... well, says he, once we get into the kitchen we'll have places for you to put all your stuff!!:eek: REALLY?? says me??? Ummm, even the canisters I'll be putting all my nuts and what not in?? Yes'm!! :D He walked some aisles asking about this and that.... it was SOOOOO cool:cool: We also went to TJ, our newest place to shop. I'm weaning him away from the local BIG markets and trying to get him to eat healthier! We talked alot about food today and how to mend our ways. I just wanted to share, he's been so great and supportive, trying the stuff I make ...... it just feels so good when you have that support!
Trust me Starfire ........ I'll be inching up on that coconut oil, it seems rich! So you say it can go in a green smoothie?? I got some stuff for green drink yesterday at a HFS so I'll try that tomorrow morning!! (wittle itty bitty bit at first ...... don't want tummy tantrums.......)
