View Full Version : Cucumber Salad Suggestions?

My Polish grandmother always used to make this yummy cold cucumber salad where she boiled the cucumbers to make them soft then mixed them with sour cream, vinegar, salt, and pepper.

Any suggestions on how I can make a raw recipe out of this?

There is one that uses raw cukes, thinly sliced onion, salt, pepper, apple cider vinigar, water & agave & then marinate overnight. Pretty good!!!
AND...There IS a sour cream recipe in rawvolution I think...perhaps you could marry the two? (you might find one by clicking the banana up at the top of the page too)

I dunno if this will taste anything like what you're looking for - but I made this at thanksgiving and it is fabulous.... everyone loved it -- AND... I used the leftovers on my salad the next day (just threw them over greens) and it was amazing!!

THAI SALAD
From "Eating without Heating" by the Boutenko kids (http://www.rawfamily.com/)

4 cucumbers
Juice of 1 1/2 lemon
1 bunch dill
1 bunch cilantro
1 medium onion diced
3 tsp hot curry powder
1 tsp salt (or to taste)
3 tbs honey
1/3 cup olive oil
1 cup soaked sunflower seeds and pumpkin seeds

Peel and slice the cucumbers into thin circles and transfer to a bowl. Next finely chop the cilantro and dill and mix with the cucumbers. Add the onion, lemon juice, and the olive oil. Finish by adding the rest of the ingredients and mixing well.

Makes 5-8 servings

My family is Polish, too. I didn't know that was a staple of the Polish diet, I just figured my family really liked it or something.

instead of boiling just let them rest after being tossed in some salt.
then drain.
you always could use a nut 'sour cream' which is only soaked nuts, liquids, and some lemon juice, s/p in a hi speed blender.
dill is always a welcome addition as are onions sliced verrrry thin.
