I am looking for simple snacks - to satisfy cravings. Something cookie/cracker/brownie/truffle....
Something i can prepare in advance - let say Sunday and take with me at work every day of the week.
I checked some receipes, can not decide, what will hold well for a few days
- i do not have dehydrator at as yet, but soon.

:)

I munch on dates and almonds and cashews but it is not enough

My favourite is mixing and equal amount of walnuts and raisins/dates and then adding in maca.. and blending as much as you can until a fudge-like consistency. I roll them into balls and coat in coconut flakes and voila - you have Mel's Fudge Balls! :p

I love this simple pecan pie recipe...

Stuff one pecan into a date (after taking the seed out of course!)

Yum!!

this recipe travels well.. and all my SAD Carnivore friends also love it... it's easy to make, satisfys the sweet craving and... it's also kinda filling...

Donut Holes by ani phyo

1 cup almonds, dry
1/4 teaspoon sea salt
1 vanilla bean, scraped (1 teaspoon vanilla extract)
1 cup dried pineapple, chop (1/2 cup pineapple & 1/2 cup mango)
1 cup pitted dates
5 Tablespoons dried shredded coconut (3 tablespoons coconut)

Add ALL ingredients into food processor – Process until it becomes a dough like consistency.

Roll into little balls then roll into shredded coconut.

Enjoy!

The red is how I tweaked the recipe. I didn’t have enough Pineapple so I added Mango and it turned out wonderful!! I make them like this all the time now – I think they taste better – but you try both ways and make a decision. I call the ‘tweaked ones’…. ‘TROPICAL DONUT HOLES!’

I love to make a simple apple pie-

Crust -
1.5 cup of nuts and/or seeds of choice
(the last "pie" i made had almonds and sunflower seeds)
1.5 cup of soaked raisins or dates
1 tspn sea salt
1/4 cup dried cranberries- optional

Blend crust ingredients in food processor and spread out on pie plate. Some folks recommend processing nuts/seeds first and then add raisins or dates later. I've done it both ways and it works either way in my processor. YMMV

Apple pie filing

4 finely chopped or sliced apples
2 tsps cinnamon
1 cup raisins
juice of one orange to help marinate filling
(you can also add spices you like- i sometimes add a dash of ground ginger, nutmeg etc)

mix together filling ingredients in a bowl and put on top of crust in pie plate. You can also take 1/3 of the filling ingredients and the whole peeled and pitted orange and food process them so that the processed part creates more of a marinade for the apple pie.

I also just love the apple pie filling on its own- as an apple sauce when made without the crust.
very simple

You can take apple pie or apple sauce with you in a small container with an eating utensil on the road.

This is adapted from a combination of other folks recipes, like A. Phyo, and goneraw website.

I can't wait to try Phyo's donut holes!

All the best
