I made Alissa Cohen's ("Living On Live Food") recipe for falafel tonight...and MY tzatziki (just made it up) and WOW...it was AMAZING!!! I made up a plate of falafel w/ tzatziki on top, morrocan raw, organic olives, and green pepper slices and I was in GREEK HEAVEN!!!
If you haven't tried Alissa's falafel, I would highly recommend it (Page 382).
This is what I did for the tzatziki:
1/3 cup soaked raw, organic cashews (measured before soaking)
1 organic cucumber, peeled
1 clove organic garlic
Small handful fresh organic dill
1/4 tsp. sea salt
Throw everything in the Vitamix and mix on LOW. Makes 1 1/2 cups tzatziki, which was enough for all 18 balls of falafel and for some dressing for the green pepper strips.
YASOU!!!

That sounds yummy, thanks for sharing.
I don't have time to make these for supper tonight, but maybe I will try them tomorrow (plus I don't have a cucumber, which would probably help).

I just made these.. and they are freaking delicious! The tzaziki rocks. I think this is the best raw dish I've ever made.
I also made a sun-dried tomato wrap and made a shawarma out of it. YUM!

Pg. 382 of "Living on Live Food", but I believe she also has the recipe in her second book.

Holy lord. I'm almost disturbed by how good this is. I'm really used to the "replacement" foods not being up to the same taste standards as the original unhealthy version, but this is phenomenal. But next time I'm putting more garlic. Because everything always needs more garlic.
