Is there a way to make a pure veggie loaf, bread, or crackers without using seeds or nuts?

I just substitute sprouted buckwheat ~ I now prefer it over seeds and nuts. You can use raw oats too... Alissa sells them and they are devine!

You can get them at Trader Joes if there is one near you.

You can also sprout the buckwheat yourself, it's very easy and fast!
Just make sure you buy raw buckwheat (kind of yellow-green-ish brown, rather light) and not "kasha" (darker grains, roasted)!
