Dinner ideas please!

I don't know what to make for dinner!
Not in the mood for salad but I need something comforting...
I wanted to make a creamy soup but none of my avocados are ripe :(
Suggestions please? :)

One of my stand-by's is a dip, easy, I can make it out of whatever's around, and it satisfies my need to change the texture of raw food.

Have you got cashews? or cashew butter or cream on hand?

This will give a nice creamy texture

or pine nuts, always great with greens

If you do have either of the above

Could try with greens

Corriander

Olive oil

Garlic

Sea salt

(( add cashew butter or a handful of pinenuts))

Put some tomato wedges in the bottom of the bowl and pour on your thick creamy green soup :o

I like Alissa's corn chips (with beppa's idea to add a zuke) and salsa or dip of some sort. I also LOVE nori wrapped anything or eggplant pizza. SUPER easy. Just slice and eggplant and put alissa's marinara on top. It's even better with a little pesto on it.

Oh here's a super simple one: turn a zuke into pasta, then put nutirtional yeast olive oil and salt on top.
Stuffed mushrooms are yummy or make a PIE and serve it for supper. Now THAT'S comfort food. LOL!

Green soup sounds ace but I had used up all my greens this morning...

So I ended up making a carrot+coriander soup using cashews to make it creamy. I only got to soak them for half and hour but it worked pretty well! I added warm water so it warmed me up nicely.

I'll keep everything in mind for future! I love nori but don't have any at the moment :(

Eggplant pizzas - would you dehydrate the eggplant first? We have some in the fridge but I haven't eaten eggplant since going raw yet!

We make the pizza then put them in the dehydrator. Yummy!

Cool, I'll put that on my list of things to do with eggplant, along with eggplant bacon!

Heh, I'm always confusing my family with American names these days - eggplant and zucchini - aubergine and courgette to us Brits!
