YAY !!!! I got Alissa's book in the mail today ... woo hoo!!

I have a question regarding fresh ginger. I'm preparing a fresh cranberry salad (not from the book) and it requires ginger. I've used ginger before, but I still am unsure of preparing food raw food with it.

Do we peel the root before using it?

I just scrape the brown peel off with the edge of a spoon. Works great. When motivated I also grate it on my little fish-shaped ginger grater.
