I learned this when I lived in the Caribbean back in the 70's.
I don't like putting anything in plastic. This is the best way I've found to keep my pineapple fresh.
When you get the pineapple home, TWIST off the green leaf stem. It should come right off with a bit of a twist.
Slice off the TOP 1/2 inch or so.
Slice off what you need for your recipe from the TOP. Put the slice on your cutting board then go around it with your knife chopping off the rind in 1 to 2 inch segments.
Put the remaining pineapple UPSIDE DOWN, CUTSIDE down on a glass plate.
Stick it in the fridge.
I keep them this way for as long as I need it. I use pineapple every day in my smoothies so one lasts about 5 or 6 days. It stays fresh and turning it upside down causes the sugar (which is in the bottom half) to flow into the top portion, making it sweeter.
