I was wondering, do you have to keep nuts in the refrigerator or freezer? Will they do well in glass Mason jars? I don't have alot of room in my refrigerator. (Veggies and fruit take up two shelves and the crisper). Also I have several kinds of organic raw grains for sprouting, also flax seed and sesame seeds, will they need to be in the refrigerator?

I keep grains, flax seeds, and sesame seeds in my cupboard (not refrigerated). I don't know about the nuts as I don't use nuts due to the confusion about how raw they are. As my guide to storage I look to see what the HFS does and do likewise.

I also keep mine in a BOTTOM cupboard, where it's cool. But I live in Oregon where it's pretty cool much of the year.

If I lived in, say, Tucson, I might put them in the fridge. Or just not buy large quantities at a time.

So far, I've never had nuts go rancid.
Try a cupboard and let your nose tell you?

You can also freeze nuts safely.

My Mother always told me the oil of the nut WILL go rancid if you don't eat the nuts up but its usually not a problem if your 'cooking' with them and snacking on them. Never been a problem for me having them in the cupboard..
Walnuts.. mmmMMMmm.. :D

I store all seeds, nuts & oils in the fridge or freezer because the oils in them can go rancid really easily
