Hi,
I don't use a juicer & was wondering if I can make the better than beef recipe with the carrots in the food processor instead?

Would I just drain off the juice?

Has anyone used parsnips? What do they taste like in comparison to the carrots?

I just use carrots in the food processor all the time. There is usually no liquid to even drain. Parsnips might work. I have seen parsnips used more for rice and mashed potato recipes though.

I've made it once and debated just using the food processor since I didn't feeling like dealing with our old juicer. I went with juicing the carrots but I would think it would work fine in the food processor, just pulse it really well to get it well mixed up.

Let us know how it turns out.

I would pulse the carrots alone in the FP and then put them in cheesecloth/strainer bag and squeeeeeze the water out. I do this when I make carrot cake

Same here...food processor and then squeeze out the juice (and drink it! :) ) It's great and my kids like it too!
