I'm having a difficult time acquiring young coconuts and there are a lot of recipes I'd like to try that require either the meat or the milk. Can anyone provide alternatives to these? Thanks! :)

Sorry, I can't think of anything that would substitute for a young coconut. When I put the coconut meat and juice into my VM and blend them well it makes a milk like beverage that is so much better then milk it is amazing. I hope you can find a source of young coconuts. Good luck.

Wow bonbon... this is a hard question. hmmmm... I don't know of anything that might be a good substitute. The texture of the meat is so unique and the flavor of course is so incredibly delicious .... maybe post this question in the recipe section.... maybe some of the rawbie chefs might have an answer!

Actually I've only recently been able to try baby coconuts and although they do have a very distinct and delicious flavour, I must say I thought to myself that it would very often be possible to use a thick almond milk instead in many of the recipes which call for them. I will certainly try this in future if i can't manage to get them.

when i am short on time i use a can of coconut juice. i use "All natural coconut juice with pulp" by Amy & Brain. You can find it at Wholes Food. It cost about 1.29 per can.

For the milk you can try using almond or cashew milk. Or any nut milk.

For the meat, gosh, I'm not sure.

Also, you can buy raw dehydrated coconut.
If you soaked it in water, you'd have coconut milk?

What recipes specifically are you trying to make? Maybe we could help then?

I do the same with coconut milk sometimes when I don't want to make coconut milk myself. But be warned that anything out of a can has up to 200 times the legal limit of toxic chemicals due to the plastic layer inside the can that dissolves into the food, so don't use it often or even at all.

nothing in a can is living unless it is raw grain

i don't think so but i think its better than the SAD stuff when i have a craving. I don't use it often only when i am short on time or cannot get to the store. also the brand i suggested is much better than the others that are loaded with chemicals

wow! thanks for all of your help! I was thinking of using the canned stuff when in a pinch. I also found O.N.E. coconut water and sent them an email about how they process it. My hfs also sells it. I think I'll try almond pulp since I always have some on hand leftover from almond milk.

Here's one recipe, in particular, that I want to try for my little one:
apricot flax teething biscuits from Rainbow Live Food Cuisine by Gabriel Cousens...
2 C flax seed
1 C dried apricots
1 C or more fresh young coconut water
(mix it all up and dehydrate it)

there are a lot of others calling for the meat so I'll try almond pulp instead. I know the texture isn't quite the same but I'll see how it turns out. Let me know if anyone tries it too and we can compare results! :o
