Anyone got any good ideas or links for the leftover pulp from making nut milks? It feels like such a waste not to use all the pulp.

Dehydrate it and make flour.

If you have a dehydrator, it can be dried and then ground into flour to use in recipes for various things (cookies, granola, pie crusts, crackers...pretty much anything that uses nuts) or you can freeze it and store for future use in recipes as well. It can also be blended into smoothies or shakes.
The reason I like to dry it and then grind it first is because for me, personally, the texture of the pulp is too...airy/spongy or something and I don't care much for it. But try it in different things and see how you like it!
