This is a version of AC's eggplant pizza...

I made her maranaraw but I used only 1 fresh tomato so it was thicker.

I made a seed cheese out of ground sunflower seeds, white miso, lemon juice, and garlic.

Peel and then slice an eggplant about 1/4" thick. Spread the cheese, then maranaraw on the eggplant and topped it with a smidgen of vegan pesto. I put them in the dehydrator to soften the eggplant a little. Even dh LOVED it. (tho he wasn't found of the seeds in the eggplant). I used 1/2 of a med size eggplant and got 8 mini pizzas-enough for 4 meals!

(peeling is important. the peel is very tough to rip/chew after it's been in the dehydrator.)

ETA: this is a CHEAP and EASY raw recipe. it's so good that I am planning on bringing it to the next potluck!)

Great minds must think alike. I made this dish this weekend for the first time. Although the toppings rocked the eggplant came out like rubber. I couldn't eat it. It was not edible. I don't like to waste food, but I was forced to scrape the toppings off and chunk the eggplant. I followed the directions but must have cut my eggplant to thin...Did you experience any problems with the "crust"?

I wonder if it would help to put olive oil on the eggplant first?

I only put it in the dehydrator *just* long enough to take the chill off. (maybe 20 min?)

Okay well then that explains it...I thought the recipe stated it should be dehydrated for 8-10 hours...wow...no wonder why it bounced when I took it out of the dehydrator....

Slightly modified

dehydrated for about 4 hours so far, probably do a bit longer, but took pictures now!!

Cashew cheze, spinach and fresh salsa

Heres the pics :D oh..and I left my peel on..I kinda like it!!
