Hi, everyone! I have a great, creamy salad dressing recipe that is used as a base for many other dressings, but I'd like to modify it to be totally raw. The creaminess comes from mixing arrow root powder with water or veg broth and heating it until the mixture becomes clear and slightly thick. It thickens as it cools. Then the other ingredients are added. Any ideas on how to make this raw? I suppose that I could try replacing it with raw mayo, but one beauty of this dressing is that there is no oil. Thanks!

Cashews soaked and blended with water. If you are not used to using cashews as a creamy thichener just use maybe half or even a third of what you would think. They really thicken. A soupy mix of cashews and other ingredients will thicken to cheesecake in a few hours. Very creamy.

I'm wondering whether blending some powdered flax seeds with quite a lot of water would produce the same kind of slightly gloopy texture of the salad dressing? Or -- and I'm only just learning how to use this, so am no expert at all -- Irish moss (that seaweed we have been talking about on these boards recently) might work, as it makes a slightly jellied consistency. Maybe I'll have a bit of a play with this and see if I can come up with anything for you.
