Anyone know what could be substituted for fluffy egg white in a recipe and or powdered sugar?

I know that milled flaxseed mixed with water can be substituted for an egg, powdered sugar on the other hand, I have no clue....
I have noticed that most people use honey and stuff as sugar subs, I was wondering myself, if I couldn't grind reg sugar cane or a sugar beet.

maybe finely ground date sugar??

It depends on what you're trying to make. If you were wanting a meringue-like consistency for the egg you could probably make a nut cream and use that. Date sugar (as blaqberry suggested) would probably be the closest you could get to sugar, or maple syrup flakes, although they're not strictly raw.

maybe coconut cream? Also, a friend of mine watched a chef who whipped fresh apple juice into a merangue type of thing

Wellllllllllll, in that case....you want to use irish moss.
In the raw book, "I Am Grateful: Recipes & Lifestyle Of Cafe Gratitude" Terces Engelhart uses irish moss to make lemon meringue pie, chocolate cream pie, pecan pie, chocolate mousse, tiramisu, and key lime pie. These are the best raw desserts I have ever seen (seen because I need to order irish moss to make them). I highly recommend the book!!!
I was just going to say the same thing as walnutty -- and I've got as far as buying the Irish moss. But not been very successful yet with the recipes -- can't get the 'meringue' as white and fluffy as it is in the pics in the book -- and you do need a very powerful blender for them -- Tierce says ideally an industrial strength one. Even with my new Vitamix I ended up with bits of carageen moss in the mix so I was a wee bit disappointed, but I'm going to have another try. It's a really lovely book, by the way, for all sorts of reasons, full of inspiration and nurture -- I feel better just for looking through it and feeling the energy and vibes.
