So, I sprouted lentils for the first time and they are ready to be eaten, but I'm not sure what to make, or eat them plain. I"ve only ever made mung beans before. Any help would be great!!

This is suppose to be like chicken patties...
2 cups carrots, shredded in food processor
1/2 small onion, chopped
1 cup sprouted lentils (do more if you like the taste of lentils)
1 grapefruit, peeled (or I've used one orange and one lemon, anything citrus should work, but don't over do it)
2 Tbsp olive oil
1 Tbsp honey
curry to taste (I like 2 t)
salt
Use food processor for carrot and onion. Put everything into a vitamix blender and blend until just slightly chunky. Pour into patties on teflex sheets and dehydrate ~24 hours. Or you could pour one big patty and break it up later. I like to serve with a spicy dipping sauce: oil, vinegar, cayenne, honey, thyme. The "chicken" is also good in a wrap.
I've also put sprouted lentils in my smoothies.

I use them to make hummous and if I have too many then I use them to make crackers.
Try Alissa's Chick-Un Patties on page 413 -- I sprouted some lentil sprouts specially to make these, and I wasn't disappointed. There were some lentil sprouts over, and I mixed these with the Curry Sauce on page 373 -- so simple, so yummy.
Or you could use them as part of the Green Soup recipe which has recently been mentioned on this board... very healthy.

I add abut 1/4 c.each of lentils and mung beans to my salads that I take to work, and also to most of my morning green smoothies. Then they're gone, so I've not had to llk for other recipes to use them up. :)

sprouted lentil salad.
i used to make the cooked version of lentil salad, now i cant stand it, love the raw one. even my housemates in rome last semester, one of whom eats very little other than SAD ended up frequently sprouting lentils for this
most ingredients are substitut-able/optional
sprouted lentils
lemon juice
olive oil
sea salt
coarse ground pepper
grated garlic
grated carrots
chopped sweet pepper
optional
red onion
avocado chunks
soaked sunflower seeds
hot pepper
sunflower greens
etc etc etc
if you want to make it "creamier" and with a little more substance, grind some sunflower seeds to a powder, and mix this in.
wicked good ;)

Oh dear I'm so sorry i assumed you had Alissa's book. Do make the un-chicken patties when you get it.
You could make a curry dressing for the sprouted lentils by shaking together some olive oil, lemon juice, a dash of agave and some curry powder... mix in some chopped tomato and onion as well as the lentil sprouts... some chopped fresh cilantro if you happen to have any...
