View Full Version : Alissa's pesto stuffed mushrooms!

:D I haven't "cooked" raw food in forever.. but I'm transitioning back to it and tonight i made the pesto stuffed mushrooms.. but I changed the recipe up a bit.. here's what I did.. and they are DELICIOUS btw.. even my husband likes them and he's a tough critic:

blended 1/2 cup of cashews with basil (dry spice) and italian spices .. I just kinda eyeballed the spices but I added A LOT of basil.

salt (again, just added it till it got to the taste I liked)

olive oil - maybe 3 - 4 tablespoons

water (to the consistency you like - I liked it a little less thick)

then I took the mixture.. and de-stemmed button mushrooms.. filled them.. put them in the dehydrator at 105 for about 4 hours.. and mmmmmmmm! they taste like stuffed mushrooms you get in a restaurant. I'm in LOVE with these and could eat them EVERYDAY!

Hmm I made 2 batches on following you receipe and 1 adding a tonatoe and onions and garlic.


They barely made it out of the dehydrator lol :)

I made these awhile back, and they were alittle strong. I think I will make them your way and see what happens.....

I might be taking these to Thanksgiving Dinner.
