This recipe was created by Teri at the Daily Raw Cafe

The Legally Raw Bar
NOUGAT FILLING
1 cup almonds, unsoaked
1 cup cashews, unsoaked
3 tablespoons honey
1 tablespoon water, or more if needed



CARAMEL
1 cup dates
1/4 cup maple syrup*
juice of one half lemon
1 tablespoon coconut oil
¼ teaspoon sea salt
1 cup water



MILK CHOCOLATE
1 cup cocoa powder
1 cup maple syrup*
½ cup coconut oil
¼ cup water

1 Soak dates in the water and lemon juice for an hour. Reserve soaking water. Meanwhile, make nougats.

2 In a coffee grinder, grind cashews into a fine powder. Remove. Process the almonds into a fine powder.

3 Place nut powders in a large bowl. Add honey and water. Stir until mixture is a thick paste-like consistency.

4 Form nougat into miniature candy pieces. Place nougat pieces on a plate and put in the freezer for an hour.

5 To make the caramel, process soaked dates, coconut oil and sea salt in a blender.
Using soaking water one tablespoon at time, blend until you achieve a thick creamy mixture.

6 Spread caramel on top of nougat pieces and return the candy to the freezer while you make the chocolate.

7 In a large bowl, whisk cocoa powder, maple syrup, coconut butter and water together until smooth and creamy.

8 Pour chocolate over candy pieces and freeze an additional hour or until chocolate sets hard.
Yield: 15-20 candy pieces

I'll have to make this and eat it on Thanksgiving...really show my family how great a raw diet is! ha-ha! Eat candy for dinner and it's healthy :p :D hehe

Did you make them? How did they taste?

I don't use maple syrup...could agave nectar/syrup replace the maple syrup?

We made these when she first posted the recipe on The Daily Raw. Although we have had great success with several of her recipes, and I enjoy reading her blog, this recipe did not work for us. The filling was good, but the outer chocolate layer was way too sweet, strong-tasting, and did not set well. We did replace the cocoa powder with carob, though, so I don't know if that had anything to do with it. I don't think we will make these again.

That's interesting, Allison -- I thought as I read it that it would be way too sweet for me. But I think it could be good if the sweeteners were greatly reduced, even halved. And, yes, you can always use agave syrup instead of maple syrup -- I always make that change in recipes if necessary, to keep them raw.

It does sound as though it would be worth a try...

I made these & they were TOO nice LOL
Next time I am only making half the amount & deep freezing them straight away (me & my kids were munching them while they were all sticky & melty). We ate half of them on the day we made them...very naughty ;)

I made half the recipe and thought it was delicious.....shared with friends and family and got the thumbs up! I like it best cold after being in the freezer...other wise it gets too moist.

can another oil be substituted for coconut oil?

Hi Jules88,

I am not sure. As coconut oil/butter hardens when cold. Other oils may be too runny and ruin the flavor.

I made it awhile back and didn't like it. My mom liked it but it just wasn't for me. I'm sure others will love it.

Ditto to what you posted. I didn't find them sweet but they never really hardened enough and I just didn't enjoy the taste of it.
