:o I'm confused. I have read several entries where people say that they are eating olives on 100% Raw. How can olives be packaged without heat treatment to seal the jars? Or are these people able to get fresh olives? I've never seen fresh olives in my area. I love olives, and thought they were one of the things that I would have to "sacrifice." :(

I'm not sure about jar sealing but raw olives are sun cured and they are yummy:)
I think Alissa sells them on her site.

I get raw dry olives from shazzie's site, they are mega strong in flavour so I use them to make raw tapenade that I add in small amounts to flax cracker mix or raw breads

Hi Mercy~ I looooooove olives!!!! :D
During "olive season" in the fall, you can get raw, uncured olives and cure them yourself in a brine solution...there are several brine recipes out there on the 'net. I have five pounds curing right now in a crock that I started last week. It takes approximately a month or so of treatment, depending on the method used, to get rid the natural bitter taste. :)

I don't know about MI but I was at Caputo's (local italian fruit market in chicago) and they had them by the pound, cheap but not organic. I bought them but threw them out when I sunk my teeth into that bitter little bugger. Didn't know I had to cure them. Oops :o

Hi Deb ~ I bought them from "All Love Olives," a very small, organic grower in Fresno, CA. Their website also has some tried & true recipes for curing the olives if you need one. :)
Hope this helps!

Olives litter the side walks and yards here in the Los Angeles County area. They are Beautiful Trees but can make a mess if you have no use for the fruit.
Maybe one day I will try the Olive cure. But I am going to Forge some Persimmons today. Just knock on the door....and pick your heart out. Most people who have Fruit Trees......don't eat the Fruit.

This is absolutely true in California. I remember when I first moved out here, riding my bike around on garbage pick-up days - people pile their lawn clippings to be picked up by Green Waste and just about every house had some sort of fruit still on branches in the pile. It felt like people were throwing away giant jewels! I couldn't believe it. Now I know to just go knock on doors when I see a tree full of fruit - and 99% of the time they let me pick as much as I want - and are happy to see it go to good use! In the past I've always tried to give back a jar or two of preserves to the person that the fruit came from. I'm sure people will appreciate dehydrated fruit as well.
:)
Maybe I'll start looking for olives now!

i also get mine from shazzies site (sun-dried) :). i don't find them bitter just yummy, but being of mediterranean descent i was brought up on strong kalamata olives anyway. jarred olives are usually cured in vinegar/salt/"cooked" -i would avoid curing olves.

Being Canadian I order raw sun-dried olives from www.realrawfood.com , as well as fresh olives in brine to keep it here: http://www.rawganique.com/kitchen.htm
You don't have to sacrifice olives when eating raw, they are also full of good fats and other nutrients.
