I'm looking for salad dressings and other sauces that aren't based on oils, nuts, or avo- right now I use herbs and spices with lemon juice, but I want to keep my tastebuds from getting bored. Any ideas?? (JSYK I'm not a fan of sundried tomatoes, at least not yet.)

There are a whole bunch of recipes at www.living-foods.com/recipes/ - in many cases the oil can just be ommitted.
I'm not a fan of oil in dressings so I usually just use various combinations of citrus juices, vinegar, agave/honey, raw mustard, etc.
Usually though, I make salads using not many leaves and lots of peppers and tomatoes and other flavourful veg - I love the taste of them so much I don't need dressing!

I am trying to minimize oils and nuts, too. I think that there is an old thread on this forum with low fat dressing recipe ideas. You would have to put the words into the search area under the banana.
I often experiment with what I have on hand.
For instance, I recdently enjoyed a carrot, raisin, and tomato dressing by just blending them together.This was a sweeter dressing.
Another sweet dressing I enjoy is made from blending mango and tomato together. sometimes I will add curry to this to make it more savory/spicy.
Another sauce I make is with tomatoes, carrots, and chili flavored spices, salt, pepper, and pour that over processed carrots, and celery for a faux enchilada dish.
I have also done as subbacultcha suggests, which is to use the regular recipes, but not add the oil or nuts/seeds/avocados.
When tomatoes are in season I often blend tomatoes with whatever herbs are around and add something sweet, something spicy and make a dressing out of that.
These days I have a ton of organic carrots around, so I am experimenting with carrots quite a bit.
