I can't get it anywhere and I have some nice eggplants sitting on my counter. I want to try to make Egg Plant Bacon or Doritos!
Can I substitute anything else in the recipe?

Hmmm, I'm not sure why they use plum vinegar....maybe for a slightly saltier taste....so maybe add a little more salt, and use apple cider vinegar(ACV)? I see they also have salt listed in the ingredients, so maybe that's not it......hmmmmm. I would imagine you could sub ACV for the plum vinegar.....ooh, if it's used for a "plummy" taste, maybe peel and pit a plum, put it in the blender with some ACV and use that....it's just for the marinade, right? So I wouldn't imagine it would matter the consistency, as long as it's liquidy. Sorry for the rambling....I hope something in here helps you!

Follow that link you posted and read the comments under the recipe. They give a few different options for the vinegar...

Hi there,
That is my recipe. For the Ume Plum Vinegar, have you looked in your asian section of your store? Or try an asian store - they are sure to have it.
Other than that, I think people have tried to make the eggplant bacon with the Nama Shoyu too - so if you have some of that it would make a good sub.
The Ume Plum Vinegar lends a salty and slighty vinegary taste. So, another suggestion would be to try ACV with added salt.
Oh, btw, the Ume Plum Vinegar does not taste like Plums - so using Plums won't be a good sub.

Ha! Isn't that just like me. Right there.
I ended up just putting one tblsp of Apple Cider Vinegar in instead. They seem okay so far. I'll be putting them in the dehydrator soon.
