Does anyone have a recipe for something that could replace mashed potatoes for this craving I have???!!! I tried the Boutenko's recipe that was made with cauliflower. No matter what I did with it, it still tasted like blended or chopped cauliflower!

I have this craving too. Big time. Oddly enough, what works for me is blending bananas, dates (prechecked for worms!) almond milk and agave syrup. I know, completely unlike mashed potatoes. For me though, mashed potatoes represent comfort food, so what do you like to eat that is comforting?

you could try blending up soaked cashews instead of cauliflower. :)

I tried making potato chips. They were awful as potato chips, but at one point during the dehydration process, they tasted just like warm mashed potatoes.

I started by making really thin slices. I can't remember now how I did this. Either my box grater or a peeler. I then soaked them in salted cold water, drained well and dehydrated. I think it was somewhere around the 2 hour mark that they got all soft and warm and tasted really good. You'd practically have to hover over your dehydrator to get them at the right moment though. They went from really tasty to pasty yucky in mere minutes.

(puts on shield to protect from hard , unripened fruits and coconuts thrown by purists..... :D )

K, this is not 100% raw. But pretty close. Just depends how much of a purist you are. It can easily be 100% as the unraw things are definitely optional.

This the recipe that I have preferred over all others for replacing mashed potatoes....

Mashed potatoes

parsnips
sea salt
butter flavor (optional, maybe try making mushroom
"gravy" instead)
seasonings to taste

I put as many chunks of parsnips in the blender as I want. I whiz them until smooth , adding a bit of water/almond milk, whatever you like to the consistency that I like and season with herbs(or not) to taste. I like to add a bit of butter flavor , but that is just me. You do not have to do that.

I put it in a ziploc bag, seal it, and put it in the dehydrator until it is warm. Maybe an hour or two. Can be left longer if you want. And that is it.

I was wondering if they could be shaped into "pringles" and dehydrated? With extra seasoning??? Whaddya think?

Hope that helps your craving some. Take care!

I put things in ziplocs too on occasion. I don't find anything wrong with it.

Mushrooms are great for that because all the liquid gold runs out of them instead of into the air. The juice makes yummy gravy for those "mashed potatoes".

I tried your mashed potatoes, tiggerbounce, and they were FAB! wonderful creamy texture thanks to the Vitamix. They had the consistency of creamy mash, although they did taste slightly sweeter, because of the parsnips. I didn't have any butter flavour, whatever that is, but I used a dash of olive oil and seasoned well with celtic salt and black pepper.

There was some over, so I blended it again with more water, a small handful of cashew nuts and some curry powder and -- voila! -- a beautiful curried parsnip soup.

Thanks again.

I have been living at Goneraw. Go look, it's addictive, just one look at the raw chocolate dream cake. I love the way the recipes print out, most with pics. I am making a recipe binder, using page protectors, it's getting pretty full. I haven't tried most of them, still collecting. Old habits die hard, I have a ginormous cookbook collection.
