Yesterday, I used about 4 lbs of carrots to make carrot juice. Now I have a lot of carrot pulp. Any ideas what to do with it? Any recipes?

I posted a recipe awhile back. It uses about 4 cups pulp, but I've also used less for a denser cake. lol..I actually juice carrots now more for the pulp then the juice!! lol:)

Walnut or almond flour
cinnamon, nutmeg, cardamom
This is just off the top of my head. Use about 3-4 cups of pulp and 1 cup of nut flour and 1 cup of soaked dates. Whir together in the food processor. Adjust to your tastes.

I have a lot of leftover carrot pulp as well. It's from about a week ago - last Friday.
1) Is it still good?
2) Are there any other recipes that call for it?

Okay I would use four cups of the pulp to make Alissa's Just Like Beef recipe. I just finished it for dinner and loved it. This is my fourth recipe from her book that I got last Saturday.
Can't wait to try more recipes.
