View Full Version : Need a no fail Birthday Cake!

I've done a search, and found cake recipes. I have Alissa's book and I've looked through there. But you never know how good a recipe really is for you, given differences in taste, until you're made it yourself.:confused:

The thing is, I can't really afford a trial run! Money is tight feeding my raw family of 4!

My youngest is turning 3 next Thursday, and I REALLY want to make an awesome cake that everyone, even SAD eaters, will LOVE!

We've been to 2 birthday parties in the last 2 months where my girl's have eaten the SAD cake. :( It's a big deal to them, and I don't want them to be disappointed about their own birthdays. The oldest will turn 6 yrs old just 5 weeks from now!

They've done so well transitioning to raw, and I want their cakes to be incredible! We've never tasted raw cake, and I've never made it. Yet, I want them to be blown away, and realize it is better than the baked version! :p

Please share a recipe with me that won't let us down!

Yes Jenna, that would be lovely!! :D Thanks so much! I was just reading through the thread.

Beppa, :) I love carrot cake, at least I loved the baked versions! Thank you!! I don't think my girl's would as excited to see it as my hubby and I. I'll try it out on them for Thanksgiving!! I can see it now, pumpkin pie & carrot cake! Now I just gotta figure out the rest of the foods.

I don't know if you've decided yet, but Snowdrop posted a delicious looking cake recipe on her blog a little while back....don't think she'd mind if I did the honors here!

Raspberry Chocolate Rhapsody Cake
Chocolate Brownie Layer:
2 cups walnuts
2 cups pecans
1 cup pitted dates
1/3 cup cacao
1/3 cup carob
2 tsp vanilla extract
1 1/2 Tbs water

Place walnuts and pecans in a food processor and process until ground.

Add dates, cacao, carob and vanilla extract. Process until well mixed.

Add the water and process briefly.


White Chocolate-Raspberry Layer:
(Adapted from Vanessa Sherwood's wonderful White Chocolate-strawberry Cheesecake)

1 cup frozen raspberries, thawed
1/2 cup cashews and/or macadamia nuts
3 Tbs melted coconut butter
1 Tbs melted cacao butter
2 Tbs honey or agave
1 tsp lemon juice
Pinch of salt

Blend in Vita-mix or high speed blender until smooth.


Coconut Vanilla Creme Topping:
1 cup young coconut meat
1/4 cup coconut or regular water
1/2 cup cashews, soaked
2 Tbs coconut butter, melted
1 Tbs honey or agave
2 tsp vanilla extract
Pinch of salt

Blend in Vita-mix or high speed blender until smooth. Put it fridge or freezer to thicken up.

Assembly:
In a springform pan or large plastic margarine tub lined with saran wrap, layer 1/2 of the chocolate mixture, followed by 1/2 of the raspberry mixture.

Put in freezer to set. Then repeat.

Again, let set in the freezer.

When the last raspberry layer has firmed up, gently transfer the cake onto a serving plate.

Cover with the Coconut Vanilla Cream topping.

If desired, decorate with chocolate sauce (just mix 1 part melted coconut oil with 1 part agave or maple syrup and 1 part cacao powder) and/or fresh raspberries.


If you make this, let us know how it turned out! Snow has, and she loves it!

I know, doesn't it look amaaaaaazing?! I've yet to try it....frankly I'm a bit scared....it's just me here, and I think I'd eat ALL of it at once! Well, at least take a good sized chunk out straight away, anyway!:D

Ohhhhh, RR. It is so good, you'll love it! PS. I made a pumkin cheesecake with a pecan crust over the weekend that was pretty good! I think we'll be having some of that for sure. Not sure about the rest, although last night those zucchini corn cakes with tomatillo salsa...OMG. YOWSA!!!!
Good luck with the cake search! I think Snow had a good one with rasberries & brownies???

Beppa- My 6 yr old watched the carrot cake video and she wants it for her birthday!!! So I was wrong! Figures, she's always surprising me. ;)

EPPP- Yes, please send the email for the ice cream! Is it something I can do with a food processor? See, I don't have a VitaMix or an ice cream maker.... Just read the recipe in the thread (YUM!) and I'm wondering if I can process almond flour in a FP? :confused:

beppa66: ahh come on you cant just slip in zucchini corn cakes w/ salsa and not expect a DEMAND for the recipe. . . pleeeese! Perhaps in a separate Thread sp no one misses it. :rolleyes:

Radiantly Raw: No I really dont think you can do it w/o the ice cream maker and maybe you can do almond four in the FP depends on how fine you want it. If you are referring to my recipe then yes you can do it all in the FP. Hey if you are close you can pop on over and use my ice cream maker!

Oh my goodness!! I just made this with strawberries (adjusted the amount of cashews and water) to end up with a frosting consistency. DELICIOUS!!! I made the bottom layer of Alissa's Date-Nut Torte (just equal parts of raisins and walnuts) and will use this Strawberry Frosting to top it. Then I'll make Erin's Store Bought Frosting to drizzle on the top. Oh my, dinner tonight is going to be great! I'll post a picture when I can!!
