I know sprouted grains and pulses are fine for the raw food diet, but I wondered if some grains can just be soaked. For instance, oat groats have not been processed or heated, and are rather soft. If you soak them for a few hours or overnight, they are actually soft enough to eat. Is this a good idea? I was thinking about doing it.

I know you can do similar things with some pulses. For instance, soak chickpeas overnight and then drain and serve with lemon juice and ginger and you have a traditional raw Indian condiment that is delicious and full of protein. I'm guessing you can do the same with some other pulses (though not kidney beans and others with various toxins that need to be boiled), as basically it is just the stage before sprouting.

I'm planning on getting a dehydrator for Christmas, but till then I want a few ideas for grains and legumes that don't need dehydrating. I know there are plenty of other yummy things to eat on a raw food diet, but I do want to include at least some of these at the moment because I'm transitioning, and also it's rather cold here. Any advice would be appreciated!

I am not aware of any one that will soften enough to eat just by soaking but sprouting will soften them.
