Last night I wanted to try out sprouting nuts in salt water and dehydrating them. I put a few different kinds of nuts all in the same bowl and mixed up some salt water. This morning, my cashews were purple! Some cashews had sprouted so I don't think they were rotten. I had sunflower seeds, almonds, cashews, and walnuts all mixed up. It's cooling off here so I don't think they were too warm. What gives?

Just curious as to why you would put salt in the water? Wouldn't that defeat the sprouting? If those nuts even sprout. I thought almonds were the only ones that sprouted. But I could be wrong.
I believe those nuts have different soaking times. That could be part of it. I think overnight is too long for walnuts and cashews. Not sure about pecans.

I have several recipe books that use salt, namashoyu, herbs/spices in soak water to salt/spice the nuts for a trail mix effect. I'm not sure what that does to the sprouting - my nuts seem to sprout. I knew the nuts had different soak times but I was hoping to get away with mixing them all instead of dirtying 5 bowls - ugh. Looks like it's not going to turn out.
My Eating Without Heating book has a recipe for walnuts soaked in a namashoyu mixture for 24 hrs. And another for sunflower seeds and almonds soaked for 12 hrs. I don't know - it must have been mixing them that screwed it up.
My kids and husband love roasted/salted nuts so I'm trying to hit on a tasty combo so they'll switch over. It's my first effort so I'll just keep at it!
Thanks.
