I was wondering...what is in coconut cream powder?
It is very expensive! I was hoping I could just "powder" the raw, organic shredded coconut I just purchased in a coffee grinder and use it instead of the coconut cream powder in recipes. Would that work?

Coconut cream powder is the high fat content coconut cream that rises to the top when coconut milk is made..
It is then dehydrated, or freeze dried, both of which affect the enzymes in the cream..
The reason that it is so expensive is because you are purchasing the highest fat content part of the coconut milk; & because of the cost of the extraction & drying process..

For those of you who are tempted to put your raw, organic shredded coconut in a coffee grinder as I was...DON'T!!!...it turned to mush! I guess...:D ...the grinder heated up the oil in the shredded coconut.

I have successfully reduced the raw shredded coconut that I purchased from Natural Zing into a fine meal..
The shredded coconut that Natural Zing sent me last year was quite dry & brittle in the bag when I recieved it..
This is probably why I was able to reduce it in size as far as I did..
If you have a dehydrator you can reduce the moisture content in practically any food to the point that pulverizing it into a powder is easy..
Why do you want coconut cream??

Mine is also from Natural Zing.
How did you process it into a fine meal?
I want it for some of the pie recipes and also to put into my cacao smoothies. The coconut oil is good in my smoothies, but it balls up (turns into teeny, tiny balls) that melt in my mouth...:p So, if I had the coconut cream powder to put into my smoothies with the raw, organic cacao powder I think that would work better.

I have dehydrated coconut (mature coconut), then ground that into a powder in my coffee grinder.
I like using the coconut cream in different recipes too. Like ice creams for example. It just adds a little taste and texture to foods.

Just ran the shredded coconut through the food processor until it was as small as I wanted it to be..
Used the pulse switch, turning off the machine periodically, so the coconut didn't overheat..
Could do the same in a coffee grinder for smaller amounts..

I grind fresh raw coconut, simply patted dry, in my coffee grinder and have had no problems with it. Pulsing it keeps it from emuslification or creaming.
