View Full Version : Raw "Candied" Lemon slices?

I was wondering if there was a raw version of candied citrus slices? I would like to make Lemon slices for a cake. Anyone have any ideas?
When I first became raw I compiled TONS of recipes (seriously... I have word documents FULL of them LOL). Here's one I found on someones blog, don't remember where and I've yet to try it. I think it was from Maw in the Raw (http://mawintheraw.blogspot.com/2006_04_01_archive.html) but there are so many different pages that I just can't go through it right now.
Honey Infused Lemon Rind
We saw this in the book "The Raw Food Primer" by Chef Suzanne Alex Ferrara. It sounded interesting and I have learned that the rind has some great nutritional value after all. Cut the rind off of a clean lemon - keeping on some of the white pulp. Cut the pieces into little bite size pieces..
Soak them for a day (in the refrigerator) in raw honey. They turn out so sweet and nice.
It's definitely a sweet treat.

That looks really good. Is it possible to dehydrate it after soaking it in the honey? I'm trying to make something like this:

Edited to add: I'm trying to do whole slices, not just rind. I tried to thinly slice some lemon and lime and I have them soaking in raw honey in the fridge.

Yep its totally possible.. Im not sure if you would want to eat them but for a garnish.. why not :)

I'm actually trying to make them edible; fruit, rind and all. I figured they could double as lemon candies, if this works.
Let us know how they turn out. I've been meaning to try this recipe for ages but always forget to get lemons when at the HFS.
I made raw chocolate brownies the other day and put some thin sliced orange on top (with peel still on it). When I took it out of the freezer, I ate it just like that, the brownies and the sliced orange, which was frozen and gave it a bit of a different taste. It tasted great!
Oh, and if I remember correctly, I read somewhere someone made candied ginger slices, by using honey and ginger, and then put them in the oven (but you can make that your dehydrator, of course). You can do the same with lemon and orange slices. My guess is, that you don't even have to put sweetner (honey or agave syrup) on top if you don't want to, the dehydrating automatically will make them sweeter.
