View Full Version : Raw chocolate nibs help

I did a search and could not find an answer first so if this has been asked I did try. I have chocolate nibs that I have had for awhile. They are starting to get those white chalky spots like regular SAD chocolate gets when it is old. Does anyone know if it is ok to still eat them or do I have to throw them out? Thanks for your help.

That's called bloom. It's caused by temperature fluctuations. The cocoa fat will migrate to the outside of the chocolate and that's what you see. It's perfectly safe to eat. Just doesn't look pretty.
