It looks tasty, but I was a little taken aback by the amount of agave. 1/4 cup? Is that right? That seems like a lot...

Melissa: I'm the one that 'created' this recipe; It really is a delicious cake; so I would say make it.

As for a comment about 1/4 c of Agave if you really measure it it's about 4-5 Tablespoons. You can always add less ; taste it , if it needs more add more. NO RAW RECIPE IS EVER SET IN STONE? It's more about the taste.

To a great cake experience; Joz

wyjoz! I have mine in the freezer waiting for me for tomorrow a.m. for breakfast - with my green smoothie! The "batter" is sooooo good! The icing is heavenly and I had enough jicama leftover that I created a second batch of batter and have lemon poppy seed "scones" dehydrating in the "d" with watermelon candy (from www.rawfamily.com - Victoria's newsletter recipe).
As far as the amount of agave - it's perfect with the lemon. It really makes a good amount of batter, but like wyjoz said, it's about taste. Try half the amount and then you can always add more.
I love lemons and got some great ones at the market yesterday - big and juicy! WOW!
This is great! I know it's gonna taste so good!!!
Nice creation you did there! Thanks!!!

Would you post a picture? Yes, it can work for skones; and also lemon poppy seed muffins, in muffin paper forms and each one 'iced' and sprinkles of poppy seeds. Or edible flower on top? Yum. Joz

p.s. remember to not completely freeze it, it just needs to 'set' the icing .

re: the agave, 1/2 of a cup for a whole cake does not sound like alot to me. Of course, I have a sweet tooth! But seriously, it serves 8-10 or something like that? I don't have the recipe in front of me, but even if if it served 4-6, that's not too much agave for me.

Hello, I love the sound of the recipes here. One thing I am worried about though, is the coconut oil. It is extremely rich in saturated fat and so, doesn't that settle in the arteries? I know hard fats can 'feed' the inflammatory response in my Rheumatoid Arthritis so I was wondering how coconut oil can be healthy, raw or not. Can someone enlighten me?:)

That's a great book.

Also, this recipe is simple and really wonderful. If you have trouble finding jicama, you can also use asian pears - Joz seems to prefer them I think to the jicama.

In any case, it's just delicious.
