View Full Version : Need some Sweet Potato Ideas..

I bought about 8 sweet potatoes and my toddler loves them steamed with a little butter, but I would like to try something raw with him. Any suggestions??

Ooh my favorite is slicing them very thin, and dehydrating into crackers. no need for seasonings or anything, just plain...delicious!

I also have a recipe for a pumpkin/fall soup with them, if you're interested.

I saw a post here awhile back about someone who liked to cut sweet potatoes into chips and eat them fresh and raw. I havn't tried it yet but I made a mental note to try it. Maybe someone could comment on cutting the sweet potatoe and eating it immediately ? I would be interested in comments about this.

Waldorf Sweet Potato Salad

1 small sweet potato, raw, peeled and coarsely grated
1 apple, grated
1 tsp. lemon juice
1/4 tsp. cinnamon
1/3 c. fresh apple juice
1 stalk celery, chopped small
1/4 c. shredded coconut
1/4 c. chopped walnuts
1/2 c. raisins

Stir all together and refrigerate.

My children love this.

I was making sweet potato chips one day with my spiralizer and got too hungry to dehydrate them. They had salt and garlic powder on them. I just ate them instead of dehydrating and they were great. A little bit starchier than the dehydrated ones but they still had a crunch.

I made Rawritos of of them. I sliced them with the mandolin, then marinated them in Bragg, olive oil, vinegar, garlic and cumin. I sprinkled a little nutritional yeast on them and put them in the dehydrator until they were crunchy.

We also have made sweet potato patties. Put a sweet pot, quinoa sprouts, a red pepper and any seasoning you like. I formed them into patties using the ring to a large mouth canning jar as a mold. I put them in for about 12 hours on teflex, flipped them onto a screen for a couple of hours more.

Next time I am going to make them with chili powder and make sour cream for a topping.
