View Full Version : Quick help with the pesto stuffed mushrooms

Hello All,

I am currently letting a coworker borrow my "LOLF" book. (I am praying that she will avoid getting gastric bypass surgery!!!)

Anyways, I am going to a gathering on Sunday (Go COWBOYS!) and would like to take the the pesto stuffed mushrooms to share with the tough crowd. One LOVELY lady there ALWAYS likes to say SOMETHING about the "wierd-o diet" I'm on... and I've read reviews here that they are pretty tasty. I'm hoping to shut her up for good =)

So, I have the pesto recipe saved on my computer, but I was just curious what mushrooms everyone likes to use, how long you dehydrate them for and at what temp you "cook" them. I won't be able to access my book til Monday. :confused: I'd love some help and anymore reviews of this recipe would be great! :)

The one time I made them I just used white button shrooms at 105 and I think it was about 5-6 hours. I always find I need to dehydrate longer than Alissa book - maybe because I down where it is warm and humid..???

I used the white mushrooms as well. I don't have a dehydrator, but put them in the warming drawer of my stove for all of one hour before I tore into them. So, I guess I'm no help there.

I marinate button mushrooms in olive oil and nama shoyu for about an hour before I stuff them. Then I dehydrate them.

I find that when I make pesto stuffed mushrooms that they are even better the next day.

I use buttons shrooms & then dehydrate at 105 for a few hours, but we eat them while they are dehydrating~cannot resist as they are one of our favs.. The next day after a night in the fridge, they are so moist & full of flavor that we just pop back in the *D* & warm up & enjoy.

These are our favorites here as well! They do taste better the next day because the oil soaks in. We sometimes use the baby bella mushrooms, but mostly just the white buttons.

Thanks for all the info/help everyone!

I used the baby bella mushies and they were too good :p
And I really loved the idea of marinating them 1st in olive oil/nama shoyu. I'm going to try another batch in a few days and try that out. I made them last night and they are definitely better today.
