Does anyone have a nice (and preferably simple) cucumber recipe?
I have a lot of cucumbers in the fridge, and don't know what to do with them besides the usual tossing in the salad.
I don't own a juicer, but I do have a blender, spiral slicer, sprout/nutmilk bag...

Tips are highly appreciated!

I adore cucumbers. I use them like I would have used chips--spread my dip right on cucumber rounds and enjoy. Esp. good with Alissa's Indian Spinach dip or Mock Salmon. I also put about 1/2 cucumber in a green smoothie. Great for you skin, hair and nails is what I hear. You can also brave the gorilla sandwich idea recently posted on the board. Enjoy.

Hi there, I like to make pasta out of cucumbers with my spiraliser.
I make a courgette hummus & I expect cucumbers could be used instead. Or make a dip by mixing with onions or other veggies you like & blasting in the food processor.
You could also make a great cooling face mask from them if you dont want to eat them all.

You can make salad cups. Cut them in large chunks, then hollow them out, leaving a little on the bottom and sides to form a cup. Fill with whatever chopped salad you like. Or you could fill with nut cheese.

We learned how to make a Pressed Cucumber Salad at Living Light. It's so good, and fat-free, too. I don't have the recipe with me right now, but I'll get it tomorrow. Basically you slice the cucumbers thinly (I like the English cucumbers), then sprinkle with salt and let them marinate. After they become soft (about 20 minutes), press the liquid out. Then add lemon juice, a tad of honey, a little nama shoyu, and some herbs. Mix and let sit. It's really tasty.

Peel the cukes, add equal parts water & apple cider vinigar, dash of salt & pepper, some agave & thinly sliced onions. Put in fridge to marinate.
OH YEAH. Yummers! Sort of a sweet & sour pickle thing...

What about just chopping them up with tomatoes, onions and olive oil? Mmmmm. So simple but perfect! :)

I have lots of them lately so I started using them to make bread. I pulse them in the vitamix so that they are still a little chunky and then add chopped onions and some ground flax. I spread them thick and leave it moist enough to be flexable.
