Now that the colder weather has hit here, I was wondering if anyone has any ideas for wraps or fillings that will be more "warming".
I still have lots of collards in the garden, and I'm craving a sort of spicy sandwich or something like that.

I LOVE Alissa's "Tuna" in Collards. Totally delicious. You could make it spicy Tuna. Or hows about Spicy walnut taco meat?

Depending on the size of your collard leaf, you could use a burger to fill it! I add a little "heat" to my burgers (jalapeno, cayenne, habanero) - just enough to give a warming feeling after you eat it. Maybe you could try that with whatever you make to fill your wraps with?
FWIW, if you use habaneros for heat, a very little bit goes a LOOOOOOONG way! :)

Alissas lasagna with diced red & yellow peppers, marinated cucumbers on butter salad atop of a collard green! :p
I'm not a spicy person but I'd imagine a dash of Tobasco wouldnt go amiss !

Honeybee Joy posted this some time ago. I've made it and can vouch for its fantastic-ness. Obviously, you would substitute collard greens for Romaine. I make them with collard greens all the time.
Fajita Wrap with Smoked Jalapeno Cheese
Fajitas:
2 portabella mushrooms chopped
1 red, yellow, and orange bell pepper chopped
1 banana pepper chopped
2 jalapeno peppers chopped
1/4 cup Nama Shoyu or lime juice
1/4 cup of olive oil
2 Tablespoons of chili powder
1 teaspoon of garlic powder
1 teaspoon of onion powder
1/4 teaspoon of cayenne powder
Combine ingredients together in bowl and marinate in dehydrator for 30 minutes or more at 105 degrees.
Smoked Jalapeno Cheese (I recommend only cashews, it gives it that smoked flavor, and I think it goes best with the jalapenos.)
2 cups raw cashews (soaked and re-dehydrated)
1 jalapeno (more if you like it hot hot!)
1/4 -1/2 cup purified water (add till it is the right consistancy for you.)
1 teaspoon celtic sea salt
Put ingredients in Vitamix and blend till creamy. You might want to start with half the jalapeno and add more if you are sensitive to hot stuff to make sure it is to you liking. I LOVE it hot though. I can't get enough jalapenos in this stuff.
Romaine Lettuce leaves (look for big leaves, the bigger the better)
Tomato cut in cubes
Take romaine lettuce leaf, spread some smoked jalapeno cheese on it. Top with fajita mix, top with tomatoes, then ENJOY!
