My stepmom made this AMAZING dressing.....a must try if you like an oniony taste in your salads! I don't have proportions though.....it's more of a "taste and taste again until you've got it the way you like it" kind of thing!
Onion Dressing
1 medium Sweet Vidalia or Spanish onion
lemon juice (probably about 1/4 c. to start)
sea salt to taste
Using a grater, grate the onion. Add lemon juice and sea salt. Mix together and let sit for at least 30 min. to meld the flavours. Add more lemon juice if you want it a little more liquid, and as much salt as you want (although, it shouldn't be overwhelmingly salty).
She served it over a salad of baby spinach and sliced strawberries......it was ADDICTIVE!!!
