I've used the water of 3 young coconuts in the past couple of days but not added the meat to my smoothies.
Any quick, cheap ideas?
It's not the real soft slimy kind of meat, but the thicker almost rubbery in texture kind.

You could slice it up to make noodles, and then maybe create some sort of pasta dish or use them in some kind of veggie wrap, or just toss them in a fruit or veggie salad.

If you don't want to use right away:
1. Add water to your blender and blend it with the coconut and then pour into ice cube trays and freeze. I put them in a freezer bag after they're frozen and then throw a few into my smoothies.
2. Grate the meat up. (I have a grater on my food processor, so its pretty easy, and the meat grates pretty well.) Then dehydrate and save to use in dessert recipes.

I've never saved the coconut "meat" before as I really like the creamy taste of the juice and meat blended together. But I see no reason you couldn't make coconut chips out of it by dehydrating the "meat" in chip sized pieces. If you try this and it comes out OK you could name it "Seagull chips".

I put the coconut meat in my vitamix and add cinnamon, vanilla extract and agave nectar. I usually chill in the refrigerator and eat like a pudding or freeze it and eat it like a sherbert. I have also put this on top of banana ice cream. I make a big batch and freeze it. As it thaws out it taste just like ice cream.

in mexico they squeeze fresh lime juice, sprinkle sea salt and cayenne powder and eat it like a steak with a knife and fork.

wow... I missed this post! guess Im bumping it up here!
I love making wraps with young coconut meat - I use them for spring rolls stuff like that - they get soggy pretty fast - but they are quite delicious!
coconut macroons is always a yummy choice.... :D
I love to make coconut milk and freeze it - then make ice cream... omg delicious!
or... I just love to eat it! :D
