I have to place butter knives on my Teflex sheets for weights. If I don't, my designed creations (circular flax, multiflavored fruit leather) run together. Does anyone have other tricks they use to keep the sheets from "flying"?

Never had that problem. I'm always amazed at how when I pour something on that sheet it just stays right where I put it.

I have a nine tray Excalibur. I love it. I thought I wanted the one with a timer, but now I am glad I did't. Later, I may buy another one after I become a Chef.:p :p They have a little white noise. I will eventually put them in a vented cabinet or in the Garage.
