I made my first gorilla sandwich today - what an interesting dish. I had a field trip with my students today and wanted to take something that would be easy to transport and keep fresh. Plus, I wanted it to be as hassle-free as possible. I was able to eat it on the bus with no mess and no fuss. Plus, it was really yummy. If you haven't tried one yet, I highly recommend it.

I've seen the gorilla sandwich, but I'm not quite sure how to eat it....do you just bite into it? Because it's basically a salad inside of a cucumber, right? Did you put any dressing into it? It seems like a great idea, it's just not entirely clear to me..

I made my DH and I those gorilla sandwiches for lunch yesterday!!
They can get a little messy.....I put greens, tomatoes, avocado and tahini in ours.
I gotta buy some more cucs
I have never heard of this. Noodle, please tell us more about how you made your sandwich and what you put in it.

I made my first one on Monday. I just used a regular kitchen spoon....the tablespoon was a little to big for me....I just dug in and then scooped out kinda in a clockwise motion. Oh, I did cut my cucumber in half and just made two sandwiches instead...because I didn't have a spoon long enough to deal with the cucumber whole. I stuffed my with layers of chopped cherry tomato/green onion/green pepper/ and avocado.....very interesting and a little messy and juicy but still a great idea I think. I pressed as many ingredients as I could into the cuke because it seems like you don't get much unless you really really hollow it out good. I ate the cucumber that I hollowed out because I hate to waste it, but I bet we could probably think of some sort of dip or something to make out the scooped out cucumber that could actually go back into it....

Yes, I also made some over the past week and they're quickly becoming my favorite raw dish, especially for carrying around.
My cucumbers are the narrow type but I found some big ones to hollow out. I just stick in a narrow knife and twist it around to get the soft stuff out (re-use it in green smoothies), then scrape with the knife around the edges. Finally, flush them out with water and let dry for a few minutes.
I put in olives, sundried tomatoes, bell pepper, separated by layers of endive. Then wrap it in plastic and put it in the fridge.

In the pic's on the site: http://www.gorillasandwich.com/ they show the skin on. I don't have access to organic cucumbers right now so I can't comment on the taste or toughness but would like to hear others reactions.
I made and ate a simple mini gorilla sandwich 5 minutes ago, just used a part of the cucumber, hollowed it out, and stuffed it with nori, avocado and red bell pepper, in layers. It tasted quite nice actually. You could probably do this with bell peppers too.

Why not just use a vegetable peeler and either peel the whole thing (since you wrap it anyway?) or give it a striped effect? I sometimes peel my cucumbers before slicing them into coins so they have that "striped" look. I don't mind eating some of the skin, just not all.

Thank you everyone who posted reponses to my question on hollowing the cucumber out. Great ideas! I am back east right now but will be back in So Cal this Sunday--will be trying this for a meal then or on Monday for lunch at work. They sound soooo good. The questions on the cucumber skin--usually buy the hothouse variety and the skin is thin and unwaxed so I eat it for the vitamins. This is one item I will spend extra on and buy organic to avoid the wax. Had too many years peeling the vitamin-loaded skin off because of the wax. Now--give me the vitamins, please.
If anyone else has tried these, please let me know how they came out for you. Not sure of the fillings, etc. that I'll end up using.

I always eat cucumber with the skin on...
Anyway, I just made one from a zucchini (with the skin on!) and that seems to work well too, though I haven't eaten it yet. :)

I just made one as well as this all sounded so brilliant!! I only used half my Org cuke coz its my last one. I put in "Tuna" sprouts, baby spinach, cherry toms and basil dip. The first bite was a bit messy but it was so darn lovely!! Thank you for bringing this to my attention!

I scooped the cuke using a teaspoon and a very narrow knife. I think one of the keys is to buy the widest cucumbers you can find.
I put some tomato and avocado inside. The tomato made it a bit messy, but it was was yummy.

That's awesome news Silkyraw! I think I'll use those sandwiches to entice my family as well, mum hates vegetables but maybe dad will love it. I mean they are not only tasty but it's such a curious thing I bet everyone wants to give it a try just for that.

Good idea, I hadn't thought of that. I was thinking of hummus or something, a dip to go on flax crackers. I hadn't even thought of a smoothie - especially the green ones.
Don't you just love how this whole raw journey opens up the creativity...it's just a simple cucumber but man the things you come up with when you really start thinking:)

I put in seeds, onion, pepper, tomatoes, tahina, whatever I have around, cukes themselves.....
And put the top back on for transport. I use the insides of the tomatoes as whatever......
I think a nice bell pepper is brilliant for this, honestly. I'll do the cuke thing after I hit the grocery store in a few days. I usually buy cukes by the boxQ!!!!!!!!!!

have any of you had trouble w/ cukes this year? Mine have been BITTER!!! Store bought, organic or not organic - probably 80% of the ones I've bought have been SO bitter. I even tried peeling them but I think maybe it was the seeds.
Anyway, this sandwich sounds good, I'll have to try it!

Bitterness may be caused by the direction the cuke was cut! I remember hearing that bitterness comes from being cut from the flower end (it may be from the stem end and not the flower end). I could be backwards with the info. Hopefully someone who really knows will chime in and either verify or set me straight. All I know is that where it is cut determines whether or not it will be bitter.

I just made a gorilla sandwich and it was great! I got an extra large cucumber (I think the english variety has thinner skins) from farmers market and cut it in half and made one for tomorrow.
I used greens, dulse, olives, walnut & avocado, same as the gorillasandwich shows,though I can see endless variety with it.

Wow, I never even thought of that... I usually cut them into circles - are you referring to how they are picked/cut from the stem?

Good cucumber question. I grew up back east where they still do this to ensure a nice tasing cucumber: Cut both ends off the cucumber. Take the cut off ends and rub on each opposite end. Maybe three or four circular motions will do. Don't know why this works, but it does.

I made one this weekend & it was GOOD! I wrapped it really good and put it in the cooler and took it with us to the river. It tasted really good after an afternoon kayaking. It had red bell pepper, romaine, onion, green olives and pimentos, & walnuts. It's perfect to take camping & quick & easy to eat.

Ok....dumb question (I guess) are you guys, who are making them, slicing everything small enough to "stack" into the cucumber...it reminds me of when we are "rolling" change...stacking each penny, quarter, dime, etc. into the little paper....seems time consuming......just wondering. I may still give it a try. Does the cucumber hold up if you "stripe" it...I thought of striping it and wrapping it in cling wrap to take for lunch on Sunday.....

Okay, so this is pretty much the best idea for eating salad. Ever.!
I took my (farmers' market :D) cucumbers and hollowed them out.
I made a mix of lettuce, carrots, tomato, and red bell pepper and tossed it with a "peanut"(almond) sauce and stuffed it into the cuke.
DELICIOUS! I have never felt so healthy eating anything in my life! I walked around the house holding my cuke and crunchingmunching, it was amazing! :)
I also made one for my boyfriend with a creamy lemony-limey dressing. I hope he likes it. Mine was super good :D
I'm definitely going to start making these more often. They'd be great to pack for school!

For me, it makes a perfect serving of salad that I can eat. I always get so excited about making salads and then I make entirely too much, but it's already slathered with dressing and there's really no way to salvage it. With a hollowed out cuke, it's easier to see how much you could stuff in there and then it's easy to eat all of it.
I didn't find eating it messy at all! It was really easy. I could see myself eating this during lecture (if I wasn't such a clutz and constantly knocking stuff over...hehe)
I don't think that it could resemble sushi. If you were to cut it, I think all of the insides would flop out.

As for the sushi idea - when I saw the Nori listed, I just started picturing a whole tube of Nori stuffed into the cavity, then some vertical shoestring veggies with maybe some strips of avocado down the centre. You could peel the cuke and wrap the whole thing in a Nori sheet too, so it would be on the outside. The moisture from the peeled cuke would soften the Nori and stick it onto the cuke. Hmmmm

i made one... but only with avacado stuffed inside. it was certainly yummy but very messy. i had to eat it over the sink.
i am going to make one for my hubby to take to work though... using my champion to shred the veges and then toss them together and stuff them in... yummmmy!

I think these are great, but I would only make them to eat for when I'm out in the boat all afternoon (canoe or kayak), they are easy to hold in one hand and eat, or possibly on a road trip to eat in the car (while driving).

I made one of these today and it was awesome!! I didn't stack the ingredients, I just marinated all ingredients together for a while, then stuffed away! It adds a new texture twist to a salad! You just crunch right through the cucumber into your salad! I would not eat it in the car though, because it did drip a little. The marinating makes things more juicy, plus I added 1/2 a lime. Try it! I used a melon scooper and a spoon.

I made one yesterday with a half cuke. Tomatoes and greens. It was really great, biting into the cuke skin wasn't a pain at all. I did, however, enjoy all of two bites before I dropped it on the floor and it splattered everywhere.

I'm glad this got bumped! I love all foods portable. It reminds me of a recipe I heard of called "walking salad"....sort of the same principle, only using a hollowed out apple stuffed with nut butter and raisins. Now I want to eat both! :)

I just found really large organic cucumbers at the market today. I can't wait to make them tonight.
I based on what I have in the house I am thinking that I will put chopped green leaf lettuce, carrots, zucchini, cilantro, broccoli and an almond butter dressing in them. Yum getting hungry just thinking about them...
My coworkers are always amused with my lunches, this will be one that I am sure they will get a kick out of.

I think they have a thing on their website for requesting products.... You can always just approach customer service at your local store and ask. Most stores will try to bring in products their customers request :)

I made one of these for the first time today to take for lunch tomorrow. The cucumber is hollowed out with spinach, arugula, cherry tomatoes and dill dressing stuffed inside. As cool as it is, the cavity doesn't hold all that much. It's stuffed down in there pretty tightly too. Hmm... maybe I just need a bigger cucumber. :D

This sounds great, but every time I eat cukes, I get a huge burping problem. About the only time I eat them now is in a raita or tzaziki. Pickled doesn't seem to bother me, but this is one raw food I definitely avoid.

i bought a bunch of cucumbers last night! haha.
So I made my first one ever with an organic english cucumber, a little narrow but it was ok, i sliced it in half and just stuffed each side, as it was my dinner.
I made a dressing of avocado, acv, agave and mustard as a nut free honey moustard.
Inside I put shredded carrots, beats, cabbage, red leaf lettuce, romaine, sprouts, portobella and broccoli... just made a fine salad and stuffed it in there, not bad. I think i will use more dressing next time tho. I will try again tonight

Thanks SO much for this post! I tried my first one today and it's just so delicious. I pared away half of the skin so that it was striped. I wrapped the cuke in a paper towel for about 5 minutes so it wouldn't be wet - when I unwrapped it it was nice and dry on the outside and I could hold it easily. I made a nice mix of corn, tomatoes, avo, olives, celery, and dulse. It was really delicious, and fun to eat. Yay!

Gives you all the tools you need and some great tips to cut down on the moisture factor. Those of you who don't wanna follow the link...here's the deets.
Tools you need:
kitchen knife
muddler (think a pestle or that bartender tool to mash the mint in your tasty mojito)
chopping block/cutting board
bowl
ice tea spoon
*zucchini corer* star of the show!

Ingredients:
Cucumber
Layers of anything you like including avocado, walnuts, almonds, olives, black kale, mustard greens and dulse. (Or whatever you think of...just keep it yummy!)
Seasoning is optional but can be added with the layers and/or between them. Sea salt, celery leaf, leek, water/garden cress, onion, chive, parsley, garlic, lovage, basil, majoram, rosemary, thyme and kelp.
How To:
Basically cut 3" of the cuc off, put it off to the side for now. Like the picture of the corer shows above, you basically hollow out the bad boy and use the guts for whatever you please.
Once this is done, the iced tea spoon is crucial to remove the moisture. Scrape the spoon along the inside wall of the hollow cucumber.

This looks like a nice change from wraps. No matter how I wrap up the wrap, I always have a runny mess. At least in the cuke, it would all be contained and not run down my arm (sigh - ha!) *Ü*

This sounds like such a great idea but I do not know how a person would hollow out the cucumber. Any suggestions?

Hi Kathy,
I use an apple corer -- (not the kind that slices the apple) see photo below -- it also works well for stuffed zucchini!
