I just ordered some from Alissa (along with her enzymes).... I know there are probably a ton of recipes out here but does anyone have anything that they've done with this lately that would be good? I'm looking for the ultimate chocolate candy bar or cheesecake recipe that I could use this for..... who knows. I'm going to experiment last one night this week...

Superchocolate goji lemon bar
* 2 cups of goji berries
* 2 cups of cacao nibs
* 1 teaspoon lemon peel
* 2 cups grated raw cacao butter
Add everything to a Vita-Mix and blend until smooth. Pour into any mould and put in the fridge to set.

When I have time, I'm definitely going for the cheesecake recipe. I don't know why but I've been craving chocolate, you know like candy bars or something. I actually went to a chef shop store in my area and they only had one type of candy mold and it was $32 and stainless steel:eek: I'm looking for something else today. I can make those bars and have them to nibble on throughout the week. For some reason, I've got chococlate fever...I never craved it or ate it much before raw...now, I seem to be daydreaming about it in these last few weeks..making some tonight if I can find the right molds....

My dear hubby just bought me a pound of cocoa nibs. How do you store them? Freezer, fridge? Also, I'm not quite sure how to even use them. Do they have to be soaked first?

I'm new to chocolate; I've only recently started craving it like crazy... Hope someone answers this for us!
I store both the nibs and the cacao butter in the freezer -- they keep perfectly and you can pretty well use them straight away.

can cacao replace carob in recipes? I have cacao nibs and want to make fundge balls :) Will it be okay?

Does it ask for powder? Huge difference between cacao powder and nibs!
