what part of broccoli to use?

For soups, as in the book, do you use just the broccoli tops or tops and stems or both?

Have to peel the stems if blend it up good?

Hey Veggie Vamp~ I use the broccoli "flowers" in my soup and I like to save the stems for juicing. Even with a vitamix you can sometimes get stem strings left over. Good luck! :D

What I like to do is hold it at the floret end, take a good veggie peeler and peel the stalks. Then I like to use the WHOLE thing, as the stalks are delicious too, it's just the fibrous peel that makes them unpleasant.

I've put the stalks through the spiralizer for noodles, they were fantastic!
