I want to make a wonderful carrot cake recipe that calls for carrot pulp. Will it work to freeze the pulp after I juice some carrots and then use it later for the cake? Thanks for the input!

You can't make the cake right away? I'd say try it. If it doesn't work out or if the "batter" seems to runny or not the right consistency - you can always add dehydrated nut pulp. I dehydrate my nut pulp after making nut mylk and then freeze that. Then when I want to use it as a flour, I take out what I need from the freezer, let it sit out for a bit, then grind it in my coffee grinder. Works great! It really made my butternut/hazelnut/raisin cake dough-like...

Yes. Absolutely. I am always freezing my carrot and apple pulp. I always make a good carrot cake with it. I am sick of carrot cake now, so I freeze it in autumn and winter, and when thawed, I mix it with various bird seeds, a little oil and some porridge oats, and put it out on the bird table. The birds love it. I use the fresh pulp first and when it is really cold, they get through two lots. You will find that you have too much pulp and then maybe you too will get sick of carrot cake. I wish I could find something else to do with the pulp.

Blazin Jane, where did you get the recipe? I have lots of carrot pulp that I had frozen and not sure what to do with, but I didn't want to waste it.
Thanks,
Wendi

Hey, just had a though, maybe you could dehydrate the carrot pulp, and turn it into a flour, and use it to make carrot tortillas with a little corn and nut pulp. That would make a really lovely colored change from the norm... Just an idea!

The question, then, is, do you do a straight substitution? 1 cup of shredded or whatever carrot = 1 cup of carrot pulp?
That way, one could freeze the pulp and have some on hand at all times. Excellent. :)

The only one that even uses it it's just as a coating for croutons to give it colour.
This is a great idea and would like to brainstorm a bit. How could one use it in existing recipes by substituting with carrot flour? Hmmm ....
Re nut meals or flours, there are lots of recipes where one is called to use a nut meal. I've found almond flour works well so far in everything I've tried. I make almond milk and freeze the pulp till I have enough to dehydrate then will dehydrate the batch and keep the flour. So far, this has worked in everything I've tried it. If I can just figure out in what way carrot flour would do the same type of thing, it would be awesome!
