hi everyone!
just wondering about recipes for rhubarb
i just harvested a ton of a wild plant called Japanese Knotweed
the little shooots of this plant are just used just like rhubarb
can anyone give me recipes for rhubarb please?????

I've always wanted to buy/try some rhubarb - but it's another veg. that I don't know how to prepare? I'll have to watch this thread... ;)

All I know is that its VERY bitter and requires a lot of sweetener.......

I just went to Recipezaar.com & did a search for rhubarb... There are several hundred recipes. I scanned the first 150 or so but I didn't really see anything that could be made RAW. There are several rhubarb pie recipes -- maybe you could use a crust recipe of nuts & dates and do a strawberry & rhubarb (thickened w/ psyllium) filling.

Check out some of the other Raw Pie recipes & see if you can substitute rhubard in... Most of the recipes call for cooking first, maybe you would have to dehydrate the rhubarb before using in a raw recipe...
