I love fresh salsa and made some pineapple salsa to go with some guacamole and veggies tomorrow. I snuck a few tastes and can't wait to get back into it.
2 tomatoes diced
1 vidalia onion diced
1 small green pepper, diced
fresh pineapple, small pieces, about 1 Cup
1 jalapeno, seeded and diced
cilantro and ginger (minced in my mini processor)
raw agave (to taste)
I think it will taste even better after sitting overnight and letting the flavors meld together.
