View Full Version : Found a great recipe for artichoke hearts.

I found this recipe and thought it looked great to try. I have artichokes coming in my veggie delivery box next week. I honestly didn't know you could eat them raw. duh!

* 12 small, tender artichokes (baby Italian violet artichokes are best)
* 1/2 cup fresh lemon juice (from 4 lemons)

* 3 tablespoons extra-virgin olive oil
* Salt and freshly ground black pepper to taste

Preparation:

Peel away all but the most tender inner leaves of the artichokes. Cut each artichoke in half lengthwise. Remove and discard the hairy inner chokes. Place the artichokes in a bowl of water to cover, add all but 2 tablespoons of the lemon juice, and let soak for 30 minutes. Remove the artichokes from the water, drain, and slice them into thin wedges. Place the wedges in a serving bowl along with the remaining 2 tablespoons lemon juice, olive oil, and salt and pepper. Let the salad rest for at least 20 minutes before serving.

artichokes are one of the things I missed most. I couldn't figure out how to eat them raw. This is very exciting for me! Thanks! :D

Thanks for this exciting information. I don't see small artichokes around here. Are you talking baby ones?

I have used the stems raw by just peeling away the outer part and yum was it delish in salads or even raw. The key is guessing if the stem is soft enough once you do the peeling.

I forgot to mention eat broccoli stems too but first peel outer stems with knife or peeler.

Today Whole Foods had a 12-pack of whole baby artichokes for $3.99.
So mine are marinating right now. Can hardly wait!:D
