View Full Version : Quick, simple company fare that isn't simple rabbit food?! <g>

Very often when requests for recipes ask for simple food to prepare for company, suggestions for awful simple rabbit food come back so I'm hoping that folks know some great company quality food yet that _is_ fast, simple and easy to prepare. Probably a tall order ... but, you never know.

I'm having company tomorrow, a last minute sort of thing so I'm scrambling around trying to find things that I'll have time to make between the time I get home after work and tomorrow.

Here's hoping others have been in this spot and have served near-gourmet quality food at short notice. Again, I realize it might be a might tall order, but one doesn't know unless one asks.

would a mexican type theme work for you?

Some things that have gone over well on sad people is...

1) "mexican" inspired salad...

Cut fresh corn off cobs, cut up sweet red pepper (or yellow or green), nice sweet onion or red onion or green onion, cut up ripe avocado, tomato, cilantro, and a little jalapeno or serrano. Add chili powder, pinch of salt, good squeeze of lime, raw oil is optional if the avo sort of makes a mild dressing.

Then you can make guacamole, and serve with chips and or flat cut carrots.

For the chips I would make those when I got home from work and grocery store. You can make some faster using corn, red pepper, etc. as a base with ground flax, (add chili powder, lime, salt and whatever else) or you could also use something like ground up oat groats. See what recipes you have. Then they should be dry in time for company.

Then I would make a nice heavy sick dessert, those always impress sad people!

Or there's also the fajita type recipes kicking round here but that might get into more work depending on your wrapper. Maybe you could just serve it on the plate too. Or I posted an EASY one for chili rellenos a while ago that was satisfying and filling with nuts in the pate stuffing.

How about a tapas type of meal with lots of small dishes of tasty raw foods like hummus in various flavours, guacamole, nut & seed pates (these all take just minutes in a food processor)? How about some spiralised courgette pasta ribbons or a carrot & walnut salad? If you have a dehydrator stuffed mushrooms only take a few hours to prepare in advance. Also date,raisin 7 raw chocolate bliss balls rolled in coconut look great, taste fab & take minutes to make & only need a quick chilling to be ready for munching

How much company? 5 people 10? Do you need to provide an actual meal or just snacky stuff? A small buffet style table maybe?
