View Full Version : Acorn Squash - help with recipes

Hello,

I am still getting used to preparing things and was wondering if anyone had a yummy way of prepping acorn squash.

I saw one recipe here for some kumquat soup and another for a cream of wheat type replacement, but is there any other ideas?

I wouldn't mind a soup type of recipe. I don't have a dehydrator, but have a blender and food processor.

This recipe comes from Chef Rachel at lemonsinthekitchen.com You can sub squash for the pumpkin. It says to dehydrate and slice, but we used it without dehydrating and spread it on apple slices.

3/4 c. almond pulp
1/4 c. flax meal
1 c. pumpkin puree
1/2 c. date paste
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. cloves
1/2 tsp. salt

Blend all. Form into a loaf about 1 1/2 inches thick. Dry for 8 hours on teflex sheet, then remove sheet and dry additional 16 hours. To make a dryer bread, slice it and dry for another 8 hours. (We just formed in a loaf and stuck in the fridge.)

You could sub the acorn for the butternut squash in this recipe as you could also use sweet potatoes.
