Just wanted to say thanks to the person (can't remember who :( , sorry )that posted links last week to the Flickr "raw cuisine pool". The pics are great, got lots of new ideas and found some great raw recipes! Lunch today was butternut pasta with spicy red pepper marinara, mmmmmmmmm! The recipe calls for the pasta to be dehydrated for a few hours, but I couldn't wait. Bet it's even better tonight for dinner! Couldn't get my pic to work, but here's one of what the completed pasta should look like (if it lasts that long!)

The butternut squash is tossed with a little olive oil, parsley, and oregano then dehydrated for a few hours...just a note, use larger sized noodles if dehydrating. I just got home and my angel hair is almost non-existent..have to try and salvage it! :eek:
Not sure what sauce is pictured, but here is what I use (for 2 people, usually on zucchini or yellow squash):
Spicy Red Pepper Marinara
1/2 large tomato
1/2 red bell pepper
2 tbsp chopped sun-dried tomatoes (I keep some soaked in oil, taste better to me that way)
1 tbsp olive oil
1 clove garlic
1 tbsp agave
1/2 tsp crushed red pepper (sometimes more)
1/2-1 tsp italian seasoning (approx.- I just eyeball it usually)
Celtic salt to taste

what kind of texture do the noodles have? do they actually have somewhat of a pasta feel? can this be done without a dehydrator also? thanksss

No, not like SAD pasta. Kind of firm/ al dente before dehydrating, not sure about after dehydrating yet (this is my first attempt at dehydrating pasta-usually eat it as is) because I put angel hair in the dehydrator and it's REALLY dried out quickly. Still trying to figure out if it can be saved... guess I'll try to rehydrate it a little.

Maybe the lightest possible coat of oil on the thicker pasta before dehydrating would give a good pasta-like texture. Haven't tried any in the dehydrator yet. Margueritte, Thank you for posting this recipe--I hope you get some texture back in your pasta.
